Butternut Squash is going down today! GRR!

In an effort to expand my already growing food vocabulary…today, I will be cooking with Butternut Squash!

Kinda nervous to even say it and to be quite honest, I’m a little afraid! Silly I know to be afraid of a vegetable. You see growng up I wasn’t exposed to fresh and healthy food, especially produce so working with vegetables is like learning a new language at least for me.

Butternut squash…?

The hour-glass shape is so odd to me and quite frankly, I’m not sure what I might find on the inside. The guys at my local Ralph’s grocery are the Experts!

Not only are they so knowledgeable about every imaginable produce item you can think of, they know how to pick the best, most ripest ones AND they know all the fun and easy hacks. They will edcuate you on how to store, clean, and even cook all your fruits and veggies!

My guys, Luis and Stephen are producer Rokstars and both of them know how to cook. Imagine, they know their produce AND can cook! Luis & his family are even vegetarians so he really nows his stuff! Today, Steve was kind enough to not only cut them for me but he also shared with me two of his favorite Butternut Squash recipes.

The first one with Olive Oil and S & P. Steamed in a covered baking dish until soft. The healthy version – cut in cubes and oven roast at 350 degrees until tender. The more decadent version – Put steamed BN Squash into a food processor or blender.

Add butter, heavy cream and a pinch of nutmeg. That’s his personal favorite! These guy are so great! What a joy to be learning from these guys! Makes me so happy 🙂 I’ll keep you posted.
